Bell Pepper Bruschetta – Mediterranean Snack with Fire & Freshness
This bruschetta is an aromatic interplay of roasted flavors, fruity bell pepper, and delicate seasoning. The combination of toasted multi-grain bread, smoked paprika, fresh basil, and a hint of balsamic vinegar brings a true Mediterranean feel to your table – vegan, rustic, and irresistible!
🌶️ Ingredients:
- 2–3 tbsp Vegannett Tomato
- 3 red pointed peppers
- ½ red onion
- 4 cloves garlic
- Fresh multi-grain bread (e.g., sliced)
- Fresh basil
- Balsamic glaze
- Salt, pepper, sugar
🔥 Preparation – Step-by-step:
-
Roast peppers:
- Wash, halve, and core the peppers.
- Place skin-side up on a baking sheet and roast on the top rack at 240 °C (464 °F) with top heat until the skin blisters and turns dark.
- Then place them in a freezer bag and let them steam for 10 minutes – this makes the skin easy to peel off.
- Let the peppers cool down.
-
Prepare pepper mix:
- Finely chop peppers, garlic, and onions.
- Stir in Vegannett Tomato.
- Season with salt, pepper, and a pinch of sugar.
-
Toast bread & serve:
- Toast multi-grain bread slices until crispy.
- Spread the pepper mix on top.
- Sprinkle with freshly chopped basil and drizzle balsamic glaze decoratively over it.
🌿 Tip:
This bruschetta is perfect as a starter, finger food, or light summer evening meal with a glass of white wine or sparkling water with lemon.
