Mediterranean Vegetable Delight – Colorful. Hearty. Sunny.
This Mediterranean-style pan-fried dish brings sunshine to your plate – with crisp vegetables, aromatic herbs, and hearty Vegannett Oyster Mushroom Spread. An uncomplicated, vegan comfort food that tastes like summer all year round.
🧄 Ingredients:
- 1 zucchini
- 1 red bell pepper
- 1 yellow bell pepper
- 1 green bell pepper
- 1 small fennel bulb
- 1 kohlrabi
- 1–2 onions
- 2–3 carrots
- A handful of cherry tomatoes
- 2 sprigs of thyme
- 2 sprigs of rosemary
- 2–3 tbsp Vegannett Oyster Mushroom Spread
- Olive oil for frying
- Salt & pepper
- Optional: fresh rocket for serving
🍽️ Preparation – Step by Step:

Prepare vegetables:
- Roughly dice all vegetables or cut them into rustic pieces.

Sauté:
- Heat olive oil in a large pan.
- Add the vegetables and sauté until golden brown all over – they should develop some roasted aromas!
- Add thyme and rosemary sprigs.

Roast Vegannett:
- Make a small well in the centre of the pan.
- Add Vegannett Oyster Mushroom Spread and roast briefly, then mix with the rest of the vegetables.
- Remove herb sprigs.

Season & Serve:
- Season with salt and pepper.
- Optionally top with fresh rocket on the plate – this adds freshness and subtle bitter notes.
